Sticky toffee Christmas pudding sundae

Ingredients

  • Dried mixed fruit 30g
  • Sherry 20ml
  • Orange 1
  • Pear halves in juice 50g
  • Sticky toffee pudding (individual portion) 1
  • Yarde Farm Christmas pudding ice cream 3 scoops
  • Lotus Biscoff crumb 20g
  • Brandy sauce 50ml
  • Salted caramel sauce 20g

Method

  1. Soak the dried fruit in the sherry overnight.
  2. Segment the orange, cut the pears into slices. Defrost and cook through the sticky toffee pudding, allow to cool and then break up into chunks.
  3. In a sundae glass layer up the ingredients and garnish with some orange peel.
