Caramelised banana and chocolate fudge croffle

Ingredients

  • Croissant 2
  • Waffle batter
  • Banana 1
  • Caster sugar 20g
  • Yarde Farm Banana Chunky Chocolate Fudge Ice Cream 2 scoops
  • Toffee sauce 20g
  • Toffee pieces 10g

Method

  1. Pre-cook the croissants as per manufacturers cooking times and leave to go cold
  2. Heat a waffle machine and place the two croissants in, then cook until a waffle shape has been achieved
  3. Cut the banana length-ways and top with sugar - using a blow torch caramelise the banana
  4. Once the croffle is cooked layer with the banana and ice cream
  5. Drizzle with toffee sauce and sprinkle over the toffee pieces
